Zitronige Zitronen

Rezept

Eines meiner Lieblingseinmachdinge: Preserved Lemons, oder Zitronige Zitronen, wie ich sie nenne.

In kleinen Gläsern (mit etwas kleiner geschnittenen Zitronenstücken) sind sie ein feines Mitbringsel.

Ich verwende die Zitronen in sommerlichen Couscous-Salaten oder in Minz-Jogurt-Dips.

Auch ganz lecker sind die Zitronenstückchen mit Mohnpesto und Spaghetti.

(Leider ist der Sommer nicht die beste Saison, um an gute Zitronen zu kommen.)

Preserved Lemons

Ingredients

10 unwaxed lemons

9 teaspoons sea salt

10 peppercorns

10 coriander seeds

4 bay leaves

5 cloves

1 cinnamon stick

Method

1. Cut 5 of the lemons into quarters and remove the pips.

2. Sprinkle 1 teaspoon of salt into a sterilized jar and then press a layer of the lemon quarters on top. Cover with 2 teaspoons of salt, a couple of peppercorns and coriander seeds, a bay leaf and a clove. Repeat this process until you reach the top of the sterile jar.

3. Break the cinnamon stick in half and push both halves down the side of the jar.

4. Juice the remaining 5 lemons and pour the juice into the jar. Seal and place in a cool dark place for 3 weeks before using.

5. The preserved lemons will last for about 3 months.
